A great pasta dish for any occasion:

Prepare the pasta al dente and drain well. Then put the pasta in a suitable bowl with the butter, Parmesan cheese and parsley, mix and cool. In the meantime, roast the thinly sliced onion in the oil. When this starts to take color, add the tomatoes and mash them with a fork on the bottom of the pan. Prepare this sauce for a few minutes, season with salt and pepper. Mix the eggs with a pinch of salt and pepper and add to the pasta. Add the sauce, stirring to mix all the ingredients well. Heat 1 tbsp. butter in a large frying pan over low heat, add a little more than half of the pasta, spread the slices of mozzarella and diced sausage evenly on top, leaving a border about 1 cm wide. Pour the rest of the pasta on top. When the bottom of the omelet is browned, carefully turn it to the other side and wait for the other side to turn golden. Cool a little before serving.
