Prepare vanilla pudding according to package directions with the soy milk, stirring in lemon juice as you go.
When ready, immediately transfer to a bowl and smooth out. Cover and let cool in the refrigerator.
Whisk the cream until smooth and serve garnished with fresh washed blueberries.
