For Spanish potatoes, heat the olive oil in a frying pan. Lightly sauté potatoes and onion wedges in it for 4-5 minutes, turning frequently.
Add bell bell pepper, mustard and chili powder and sauté for 3 minutes. Add tomatoes and vegetable soup, stir and bring to a boil, simmer for about 25 minutes, potatoes should be soft.
Season with salt and pepper, sprinkle with parsley and serve immediately.
