Instructions:

Preheat oven to 220 °C.

Rub roast with salt and pepper. Place the pork rind side down in a roasting pan and roast at 220 °C for about 30 minutes.

Turn the roast to the other side, baste with beer, add onions and bay leaves.

Reduce the temperature to 180 °C and roast the roast for another 90 minutes. Repeatedly baste with the roast stock.

At the end of the cooking time, remove the roast, wrap it in foil and let it rest for 10 minutes before cutting.

Then serve with napkin dumplings.

Preparation Tip:

Instead of napkin dumplings also fit bread dumplings, as well as coleslaw or white cabbage.
