For the nut pancakes, place the cashews and pumpkin seeds in a food processor, grind finely and place in a bowl.
Add the eggs, milk, cinnamon and vanilla and mix to a dough. Chop the bananas and mix with the curd in a bowl.
Bake the pancake mixture (makes 4 pieces) in a pan with butter. Fill the finished pancakes with the banana-curd mixture, roll and then sprinkle the nut pancakes with powdered sugar and cocoa.

If you like, you can serve whipped cream with the nut pancakes.
