For the Uhudler marshmallows, first boil 350 g Uhudler grape juice and reduce to about half. Stir the powdered gelatine into the cold grape juice and allow to swell for 10 minutes.

Meanwhile, boil the granulated sugar, fruit juice reduction and glucose syrup together. Now stir the grape juice with the gelatin into the hot fruit pulp. Then beat the mixture in a food processor until it is lukewarm.

Pour the mixture into a baking dish (approx. 20 x 30 cm), smooth it out and let it cool in the refrigerator. Now cut the marshmallow mixture out of the mold, cut into evenly sized pieces and roll the Uhudler marshmallows in powdered sugar.

Preparation Tip:

If you are on a vegan diet, you can simply replace the gelatin in the Uhudler marshmallows with agar agar.
