Instructions:

For the lentil stew, soak the dried lentils in cold water overnight.

Chop the pancetta into cubes. Wash soup vegetables. Cut carrots, parsley root and celery into cubes, chop leek into rings. Peel and finely chop onions and garlic. Heat oil in a saucepan. Sauté the vegetables and the pancetta in it. Pour in vegetable soup. Strain the soaked lentils and add them to the pot. Add the sausages and cook on medium heat for 45 minutes.

Wash and finely chop the parsley and add it just before the end of the cooking time.

Season the lentil stew with pepper, salt and vinegar and serve hot.

Preparation Tip:

Serve toasted farmhouse bread with the lentil stew!
